A fellow liker of latex came up with an explanation I find quite compelling, from the realm of computer graphics.

If you are using a CAD system to visualise some shape, you want to be able to see the form as clearly as possible. Two common ways to achieve this are to place a mesh over it, or to render it as reflective. Both accentuate the curves of a shape.

Fishnet and latex perform the same rôles for the human body.
